Indian Cuisine
The Indians believe that food is a gift of Gods and is treated with great respect. As a cuisine it aims at nourishing the body and pleasing the mind and eyes. The spectrum of Indian cuisine can be said to lie between two dietary extremes: vegetarianism and meat eating.
The ingredients of each meal are based on five rasas or flavours: sweet, salty, bitter, sour and spicy. The main characteristic of all Indian meals is the inspired use of spices. However, other than spices, the other main ingredients are milk products like ghee (used as a cooking medium), coconut and curd or dahi.
The Indian Tandoori and curry cooking is legendary. India also produces some of the finest teas, coffees and spices in the world. Desserts from the south include the Mysore pak, the creamy payasum, carrot halwa and various other sweets made of milk products.
